Ella’s Kitchen

March – The days are getting longer. Invite friends over for afternoon coffee or tea and serve one of these scrumptious sweets. Try the dip while enjoying March Madness.

 Butterfinger Delight

  • 1 cup crushed butter flavored crackers (30)
  • 1 cup graham cracker crumbs
  • 4 Butterfinger candy bars (2.1oz ea) crushed
  • 3/4 cup butter melted
  • 1-1/2 cup milk  cold
  • 2 pkgs. (3.4oz.) instant vanilla pudding
  • 1 qt reduced fat chocolate frozen yogurt softened
  • 1 carton 12oz frozen whipped topping 

 In a large bowl, combine the first four ingredients. Set aside 1/2 cup for topping. Press remaining crumb mixture into a ungreased 13 X 9” X 2” dish. Chill for 5 min. meanwhile in a large bowl, whisk pudding mixes for 2 min or until set. Mixture will be thick. Stir in frozen yogurt and 1 cup whipped toopping until smooth. Spread over crust. Top with remaining whipped topping. Sprinkle with reserved crumb mixture. Chill till set.

 Butterscotch Cheesecake Bars

  • 1-12oz pkg. butterscotch flavored morsels
  • 1/2 cup margarine or butter
  • 2 cups graham cracker crumbs
  • 1 cup chopped nuts
  • 1-8oz. pkg. cream cheese softened
  • 1-14oz. can sweetened condensed milk    
  • 1 tsp. vanilla
  • 1 egg

   Preheat oven to 350º. In medium sauce pan, melt morsels, butter, stir in crumbs. Press half mixture into greased 13X9” baking pan. In large mixing bowl, beat cream cheese until fluffy. Beat in sweetend condensed milk, vanilla & egg. Mix well, pour into prepared pan. Top with remainder of crumb mixture. Bake 25-30 min. or until toothpick comes out clean. Cool to room temperature. Chill before cutting into bars. Refrigerate leftovers. 

 Buffalo Chicken Dip

  • 2-10oz cans Chunk breast of chicken
  • 2-8oz. pkgs. cream cheese
  • 1 cup ranch dressing
  • 1/4-1/3 cup hot sauce
  • 1-1/2 cups cheddar cheese shredded

Place cream cheese in shallow casserole dish. Microwave on 59% power until chese is soft-2-3

minutes. Stir in chicken, dressing, hot sauce and 1 cup of cheese. Sprinkle remaining cheese on top. Microwave 100% power 2-4 min. until hot & bubbly. serve with French bread cubes, celery sticks, wheat crackers or tortilla chips

 Arizona Lemon Pie

  • Cut up 1 whole lemon in chunks (remove seeds and ends)
  • Grind up in food processor or blender until it is mush.
  • Add 1 stick margarine (at room temperature)
  • Add 4 whole eggs   
  • 1-1/2 cups sugar

Blend until smooth!

Pour into unbaked pie shell. Bake 40 minutes @350º oven.

Serving Suggestion: I top mine with Dream Whip and garnish with strawberries.
