Ella’s Kitchen

“Pizza casserole” must be a big thing this season. I received three different recipes for it. I have one of them printed here. Some of the others called for ground chuck, coarse ground stew meat or Italian sausage. Experiment on variations. Cook it up ahead. Cut in small squares for appetizers on Super Bowl Sunday!

Starting next month, Ella’s Kitchen will be taking on a new format. Looking forward to sharing with you then.

Pizza Casserole
By Marty Hines of Silvis, IL

2 Cups cooked noodles
8 oz. ground beef or turkey
1/2 Cup chopped onion
2 oz. thickly sliced pepperoni, chopped
1 3/4 Cup Italian flavored tomato sauce
3/4 cup shredded mozzarella cheese
1 cup mushrooms, drained
1 teaspoon pizza sauce or Italian seasoning

Preheat oven to 350°. Brown meat and onion in skillet sprayed with Pam. Stir in noodles, pepperoni,tomato sauce and seasonings. Mix well. Pour into ungreased 8”x 8” baking dish. Bake 20 min. Sprinkle mozzarella cheese on top. Bake an additional 5 min. or until cheese melts. Serves 4.

Great with a green salad and garlic bread.



Chocolate Syrup Brownies

1/4 lb. butter or margarine
1 cup sugar
Cream together
Add 4 eggs, beating well.
Add:
1 teaspoon vanilla
1 can Hersheys chocolate syruo
1 Cup plus 1 Ttablespoon flour
1/2 teaspoon baking flour

spread in greased jelly roll pan.
Bake 350° for 30 minutes.

Frost while warm.

Frosting:
6 Tablespoons margarine
4 Tablespoons milk
1 1/2 Cups sugar
Bring to a rolling boil. Boil for 30 seconds. Remove from heat. Add 2/3 Cups chocolate chips. Beat until smooth. Spread on \warm brownies.


Glazed Salmon

4 salmon fillets (6 oz. each)
1/4 teaspoon salt
1/8 teaspoon pepper
2 Tablespoons brown sugar
2 Tablespoons lemon juice
1 teaspoon cumin

Place salmon in a greased 11 inch x 7 inch baking dish; Sprinkle with salt and pepper. Combine the remaining ingredients; Spoon over fillets. Bake uncovered at 400° for 10-15 minutes or until fish flakes easily with a fork.


Peanut Butter Pie (1 pie)

8 oz. Cool Whip
1 Cup powdered sugar
3 oz. cream cheese
1/2 Cup peanut butter
1 chocolate cookie crust

Mix cream cheese and peanut butter. Add powdered sugar, then add Cool Whip. Pour into crust.
