Ella’s Kitchen

Art Ginsberg passed away last November at his home in Florida. You may know him as “Mr. Food.” He was an early
pioneer of American television chefs. I am sharing with you some of my favorite recipes of his. “Ooh! It’s so good!”

Sweet and Savory Pizza

prep time 10 min / cook time 5 min
8 servings

8 oz. Brie cheese 2 Tbls. butter
2 pears, peeled, cored and thinly sliced 1/2 tsp. ground cinnamon
2 tsp. olive oil 4 Tbls. light brown sugar
1 (14 oz.) package pre-baked Italian pizza bread shell

Remove and discard rind from cheese. Cut cheese into cube, set aside. Melt butter in large skillet over medium heat. Add pears and sauté 3 minutes or until tender, sprinkle with cinnamon. Preheat oven to 500 degrees. Place bread shell on pizza pan or baking sheet. Brush with olive oil and top with cubes of cheese. Spread cooked pear mixture over cheese, sprinkle with pecans and brown sugar, Bake at 500 for 5 minutes or until heated
thoroughly. Slice into wedges and serve immediately.

Lime-Baked Fish

prep time 8 min / cook time 20 min
6 servings

6 (6 oz.) halibut or other whitefish filets (1 “ thick)
3/4 tsp. salt 1/2 tsp. pepper
3 Tbls. lime juice 1 container sour cream (8 oz)
1 Tbls. chopped fresh parsley or 1 tsp dried parsley
1 tsp. grated lime peel

Preheat oven to 400 degrees. Place fish in a greased 9 X 13 baking dish. Sprinkle filets with salt and pepper. Combine lime juice, sour cream and parsley, mixing well. Pour over fish. Sprinkle with lime rind. Bake at 400 for 20 minutes or until fish flakes easily with fork.
Bit of Zest – The grated lime peel adds pretty flecks of color and hints at the flavor of these filets drenched with lime-spiked sour cream sauce, so be sure to grate the lime before juicing it.

Mulled Cranberry Drink

prep time 5 min / cook time 10 min
10 Cups

1 (48-oz.) bottle cranberry juice
3 Cups apple juice
3 Cups orange juice
1/2 cup maple syrup
1 1/2 tsp. ground cinnamon
3/4 tsp. ground cloves
3/4 tsp. ground nutmeg
1 orange sliced

Bring first 7 ingredients to a boil in a Dutch oven. Remove from heat;
ladle into individual mugs, or transfer to a slow cooker to keep warm.
Add orange slices just before
serving. Garnish with
cinnamon sticks, if desired.

Triple Chocolate Mocha Cookies

prep time 13 min / cook time 11 min per batch
about 3 doz

1 box cake mix, devil’s food
1/4 Cup strong brewed coffee
1 Tbls. coffee liqueur (optional)
1/4 Cup butter, melted
1 large egg, lightly beaten
1/2 Cup chocolate chunks
1/2 Cup milk chocolate chips
1/2 Cup white chocolate chips

Preheat oven to 350°. Beat first 5 ingredients at medium speed of an electric mixer 2 minutes, stopping to scrape down sides. Fold in chocolate chunks, milk chocolate chips and white chocolate chips. Drop dough by heaping teaspoonfuls, 2 “ apart, on lightly greased cookie sheets. Bake at 350° for 11 minutes or until set. Remove to wire racks to cool.
