Ella’s Kitchen

Fall is in the air. It’s time to say good-bye to summer and get back into the fall routine. Some of the favorite fall meals that my family enjoyed were called Impossible Pie. Basically, a one-pan meal that was convenient to fix with our hectic after school activity schedule. The recipes call for Bisquick, and were probably created in the Bisquick kitchens, but I have used Jiffy Mix as well. -Ella

Impossible Cheeseburger Pieimpossible-cheeseburger-pie
1 lb. ground beef
1 c. chopped onion
1 tsp. salt
1 c. shredded cheese
1 c. milk
2 eggs
1/2 c. Bisquick baking mix


Preheat oven to 400°F. Brown ground beef and onion; drain. Stir in salt. Spread into 9 inch pie plate. Sprinkle with cheese. Stir milk, eggs and Bisquick mix with fork until blended. Pour on top of ground beef and cheese. Bake at 400°F for 25 minutes or until knife inserted comes out clean.

Impossible_Vegetable_PieBisquick Impossible Vegetable Pie
2 c. cooked broccoli, drained
1/2 c. chopped onion
1 c. grated Cheddar cheese
3 eggs
1/2 c. chopped red sweet peppers
1 1/2 c. milk
3/4 c. Bisquick
1/4 tsp. pepper
1 tsp. salt


Heat oven to 400°F. Lightly grease pie plate. Mix broccoli, onion, green pepper and cheese in pie plate. Beat remaining ingredients until smooth. Pour over broccoli mixture in pie plate. Bake until golden brown, about 35 or 40
minutes. Let stand 5 minutes before serving.

taco-pieImpossible Taco Pie
1 1/2 lbs. ground beef
1/2 c. onion, chopped
1 pkg. taco seasoning mix
1 (4 oz.) can green chilies, chopped
3/4 c. biscuit mix (Bisquick)
1 1/2 c. cheese, shredded
Sour cream
1 1/2 c. milk
3 eggs
2 tomatoes
Lettuce


Heat oven to 400 degrees. Grease large pie plate or deep casserole dish. Brown meat with onion, drain. Stir in taco seasoning. Spread mixture in pie dish. Top with green chilies. Beat milk, eggs, and biscuit mix until smooth. Pour over meat mixture and chilies. Bake 25 minutes or until crust is done in center. Top with cheese; melt in oven. When cooled a little, put sour cream, tomatoes and lettuce on top.

6 c. tart apples
1 1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. Bisquick
1 c. sugar
2 tbsp. butter
3/4 c. milk
2 eggs


Heat oven to 325 degrees. Grease 10 x 1 1/2 pie plate. Mix apples and spices; turn into plate. Beat all ingredients until smooth, 15 seconds in blender or 1 minute with hand beater. Pour into plate.

Streusel Topping
1 c. Bisquick
1/2 c. nuts
1/3 c. packed brown sugar
3 tbsp. firm butter


Mix until crumbly. Sprinkle topping on pie. Bake until knife in center comes clean, 50-60 minutes.

2 c. cut-up cooked turkey
1/2 c. chopped green onions
4 oz. shredded Swiss cheese
3/4 c. Bisquick
1 c. frozen or canned mixed vegetables (drained)
1/2 tsp. salt
1 1/2 c. milk
3 eggs


Grease 10 inch pie plate. Sprinkle first 5 ingredients in pan. Beat remaining ingredients until smooth. Pour into pie pan. Bake until golden brown, 400 degrees for 35 minutes. Stand 5 minutes before cutting. Garnish with parsley. 6-8 servings.
