Orange Mandarin Cake
By Evelyn Davidson of Silvis, IL

1 box yellow cake mix
1 C water
1/3 C cooking oil
3 eggs
1 small can mandarin oranges, drained

Blend thoroughly. Pour into a 9X13 pan. Place in 350 degree
preheated oven. Bake for 25 – 30 minutes.

Frosting: 1 box instant vanilla pudding
8 oz cool whip
I small can crushed pineapple, drained

Mix items together and spread on cooled cake. Enjoy


Strawberry Delight Dessert

8 oz cool whip, lite
12 oz cottage cheese, low-fat
1 small can crushed pineapple
1- 3 oz box sugar-free strawberry jello (dry)
1 pint fresh strawberries

Mix all together, then refrigerate for at least 2 hours.
A great lite dessert


Low Calorie Onion Dip

1/4 C skim milk
1 c low fat cottage cheese
1 envelope dry onion soup mix

Blend milk and cottage cheese until smooth
Add onion soup mix and blend well.
