June – a month for simple, prepare-ahead meals; one-pot cooking; and salads of every kind. Enjoy the summer’s beginning.

5 Super Easy Crock Pot Dinners – These super easy menus came across my desk. My granddaughter wanted to try the Orange Chicken. It was very good, but not what we had imagined. We both thought it would be more like an orange glaze chicken that is often found in Oriental cooking. The orange/BBQ sauce was of a thinner consistency. We served it over a bed of rice. Still, very good. I am ready to try all of the others!

BBQ Chicken

3-4 Chicken breasts (boneless, skinless)
16 oz bottle of BBQ Sauce
1/2 cup Zesty Italian Dressing
1/4 cup brown sugar


Mix together ingredients. Put in crock-pot. Cook High: 2-3 hours or Low 4-5 hours Shred with a fork and serve on buns for yummy BBQ chicken sandwiches. Or leave them whole and serve with some garlic mashed potatoes and veggies.

Salsa Chicken

3-4 Chicken breasts
1 jar of salsa
1 can black beans
1 can corn


Mix all ingredients together and put in crock-pot. Cook High: 2-3 hours or Low 4-5 hours. Shred with fork. Serve over rice, use as filling for burritos, throw it on top of lettuce for a fun taco salad….

Orange Chicken

3-4 Chicken breasts
1 cup BBQ sauce
1 cup Orange Marmalade
1-2 tsp soy sauce (optional- I did not use)


Cut up chicken into cubes and put in crock-pot. Mix together ingredients and pour over chicken. Cook High: 2-3 hours or Low 4-5 hours. Serve this with a side of homemade fried rice and add a ton of veggies! Way better than takeout!

Ranch Chicken Tacos

3-4 Chicken breasts
1 can chicken broth
1 packet ranch mix
1 packet taco seasoning


Put everything in the crock-pot and let it do it’s magic! Cook High: 2-3 hours Or Low 4-5 hours. Shred with a fork when done and serve in tacos with your favorite toppings! Super fun and easy for Taco Tuesday

CREAMY-RANCH-CHICKNE-ON-RICE

Creamy Ranch Chicken

3-4 Chicken breasts
1 can Cream of Chicken
1 packet Ranch dressing mix
1 packet Italian seasoning packet
1/2 package of cream cheese (4 oz)


Mix together cream of chicken, ranch, and Italian seasoning. Place chicken in crock-pot and pour mixture over. Cook high: 2-3 hours or low 4-5 hours. Once done, shred with a fork and add the cream cheese to add thickness and make it creamy. Serve over egg noodles or rice.

Perfect Egg Salad Sandwich

6 hard-boiled eggs (large) peeled and chopped
3/4 Cup mayonnaise (my preference is Miracle Whip but that is entirely up to you)
3/4 Cup chopped celery
1/2 Cup sliced or chopped olives
A pinch of curry powder (either black or green)
Salt and pepper to taste
1/4 Cup pickle relish
Lettuce leaves
1/4 Cup chopped green onion or chives
12-16 slices of bread (your choice)


Mash a little of the chopped egg with a fork. Mix together the egg, mayo, celery, olives, relish, onion. Fold in the curry and salt and pepper. Place some lettuce on a 6 -8 slices of bread, add some of the egg mixture to each, top with other slice of bread. Enjoy.

2 Cups baby spinach leaves
1 Can pitted black olives (I used large olives, and kept them whole, but prepare anyway you like)
1 can, the larger size, of mandarin oranges, partially drained
1 Cup shredded cheese (I used 1/2 sharp cheddar and 1/2 mozzarella)
I Cup crushed Doritos


Toss spinach with the olives and oranges and cheese. This can be prepared earlier. Just before serving add the crushed Doritos.
I didn’t add a dressing, just the moisture from the oranges. My grandson ate it – even the spinach!
